Growing Mushrooms in the Dark

Angel Moioli is among the last Parisians growing mushrooms in the underground quarries of France. Most mushrooms are grown on an industrial scale above ground, but this “gardener of the night” continues his patient work, knowing that his methods produce the best tasting champignons.
